but oh, the summer nights...


i am done with my law degree! i'm done! i've never envisioned myself ending.. ever... and although i have another year left, everyday i realise i'm gonna stop being a student soon and i don't know if i'm ready for that!

also, like i mentioned earlier, i'll be making a wedding cake for someone special, and it's my honour to do it. i'm still very scared yet excited about it - i don't know if i'll screw up. ubersuperbakes has always stood for old-fahsioned desserts, wholly edible and appealing to both the eye and stomach. but wedding cakes are always regal, modern, elegant and sophisticated; very unlike my style with desserts. what more, this wedding cake is not going to be conventional because it's chocolate. yes, i'm using chocolate buttercream and not fondant and in malaysian weather who knows what that will become.... also i'm moving along the lines of cupcakes rather than a whole tiered cake because it's easier for both the baker and the guests that way. when i get home i'll be baking a lot to experiment new things and to make up for the lack of updates...

this blog has not been updated for about a month, but not much has happened. i've literally been cooped up in my room, studying for my finals. so stressful but just as fast as it came it has gone and graduation is next on the agenda. things are looking good, i've found a place in london and settled the lease.

i've also been buying a lot of baking books but not been utilising them well, i blame just the lack of enthusiasm. but today i started again with something simple: it's still experimental but i'm waiting to call it a new creation, something along the lines of chocolate quiche. i've used only one ingredient but that's because i haven't gotten anything else... rest assured though that this will be improved in time. it's simple, quick and cheap :)

recipe:

Simple Chocolate Quiche

1 1/2 cups digestive biscuit crumbs
60-80g butter
200g double cream
150g milk chocolate
2 generous tbsp nutella
1 large banana
1 large egg
Vanilla ice cream

1. Rub the butter in with the disgestive biscuit crumbs until well incorporated. Press into the bottom of an 8 inch pie tin, letting the crumbs go up to the sides. Chill.
2. Heat the cream up, just until below a simmer.
3. Melt the chocolate and nutella inside until the cream is totally engulfed by chocolate. Add in the egg and mix well.
4. Slice the bananas into thin slices and arrange on top of the chill biscuit base.
5. Pour in the chocolate cream and bake for 20-25 minutes at 180C.
6. Chill for two hours before serving, with vanilla ice cream.

Ideas:
You can other things into this quiche to make it seem more like a dessert quiche. For example, chocolate chips, oreo cookie pieces, marshmallows, nuts, other fruit like raspberries and strawberries.

0 cups of sugar:
